Abstract: A broad look at the probiotic industry from bench-to-bedside and soil-to-table. This presentation will highlight the latest science, the regulations, the markets and a look to the future.

Dr. Tompkins did his doctorate studies in Biochemistry at the Hospital for Sick Children in Toronto, Canada. After completing co-operative post-doctoral studies at the University of Guelph and Labatt Breweries in London, Ontario, he joined Lallemand Inc. in December 1995 as the R&D Supervisor at their research facilities located in the Biotechnology Research Institute in Montreal, Quebec. In 1999, Dr. Tompkins became the Director of Research at Institut Rosell Inc., the Human Nutrition and Health Division of Lallemand. At the Institut Rosell he has established a strong scientific programme to evaluate the genomic and pre-clinical aspects of probiotics and mineral enriched yeast. He has published numerous scientific articles on mineral enriched yeast, the regulations and safety of probiotics and their mechanisms of action.
