Biography

Dr Frédéric Bouvier is Scientific Advisor, Nutrition and Health R&D at Roquette, a French global leader in nutrition and health.

Since he got his PhD in Biochemistry and Food Science, specialized in lipids chemistry, from the University of Bordeaux, France, Frédéric has served multiple scientific and management roles with Roquette, spanning the science and technology of plant-based ingredients for food and nutrition and also for industrial applications.

During the first part of his career, Frédéric managed a research group focused on material structure characterization (food, pharmaceutical and industrial materials) thanks to rheological, thermal and microscopical analysis tools. After a few years supporting the development of a wide range of industrial applications of plant-based components (mainly starches and hydrocolloids) he moved to microalgae area and was deeply involved in many innovation projects dealing with lipids and proteins for food, nutrition and health, in Asia and the USA where he relocated during a few years. Back to France, Frédéric led different innovation projects aiming at identifying and developing valuable components (fibers, proteins, lipids) which are currently lost for humans because they are part of co-products from the industrial processing of pea, corn, wheat and potatoes.

As science & technology advisor, Frédéric is currently supporting the extension of the plant-based ingredients range of Roquette, particularly the proteins and the fibers, taking into account processing technologies but also nutritional properties. As such, Frédéric is also collaborating with the French Bioeconomy Cluster IAR (Industries Agro Ressources) where he serves as President of the Ingredients Commission. He recently facilitated a workshop dealing with valorization of the biomass, he has contributed to several publications and papers at conferences on various topics representative of the diversity of his career.
