Biography

Dr. Trust Beta is a Full Professor in the Department of Food & Human Nutritional Sciences, Faculty of Agricultural & Food Sciences at the University of Manitoba. She is a certified food scientist whose background evolved from an initial grounding in general chemistry/biochemistry to encompass food carbohydrates, food chemistry, food analysis, cereal chemistry and then, bioactive components (phytochemicals) and functional foods. Her challenge is to understand what is in our food and if food can indeed be our medicine. Dr. Beta and her team are working towards understanding the role of plant chemicals (phytochemicals) in promoting health when consumed as part of our daily diet. What are those bioactives in plant-based foods? Can they be optimized genetically & through post-harvest processes? Is our digestive system efficient in absorbing the best phytochemicals required to keep our bodies healthy? She has served as a Canada Research Chair in Grain-Based Functional Foods from 2006 to 2016 and is currently serving as Associate Editor of Cereal Chemistry journal and on the Editorial Board of Food Chemistry.
